With baby #2 due any day now, I'm finding that I have less and less energy to prepare fancy Paleo dinners. I'm still loving the effect on my body of eating Paleo and I want to stick with it and not totally derail after he's born so I've been searching high and low for some easy Paleo dinner ideas that I can add to my recipe rotation! It really does make a huge difference in how I feel, and obviously how I look too!

If you've visited my Instagram recently, you might've seen what a huge change in diet can do to a pregnant body - pretty astounding really! I've been eating healthy consistently since we moved to New Hampshire a month and a half ago and I am starting to really love it rather than dread it! My body craves things like vegetables (WHAT?! WHO AM I?!) and I look forward to trying new Paleo recipes with our family all the time. It's a great way to get us all in the kitchen together enjoying quality time and testing out new foods that we've maybe never thought to try or cook a certain way.

I'm on a 2 month countdown to my awesome sister-in-law's wedding and I want to keep on track until then so I can lose some weight beforehand and feel great in a dress. Here are some of the best Paleo dinner ideas for busy moms that I found - and I can't wait to eat them all the time!

Some of these recipes contain spiralized veggie noodles and if you haven't gotten a spiralizer yet, I highly recommend it! This is the one I have and it's been great so far! For making cauliflower rice, I definitely recommend a food processor to lessen the burden and save you a ton of time. I actually thought I hated cauliflower until I had cauliflower mash (made in a processor) and I can't wait to try my hand at cauliflower rice!   1. I totally agree with you on being healthy throughout pregnancy. It really makes a difference. I was very laid back in my first pregnancy. I ate everything I wanted, and even though I took on pregnancy yoga (which was great) I put on 3 stones by the end of my pregnancy.

    These recipes look delicious, I’ll definitely try some of them.

    1. I was totally the same! My first pregnancy, I didn’t focus on my health at all and I gained ~60 lbs. It was a lot harder to bounce back in the end so I’m hoping by gaining less this time and focusing more on my health, it’ll be easier to bounce back and keep up with the kids!
