I don't know about you, but I'm not a huge fan of eggs. On the rare occasion that I *do* eat them, I generally have to have toast to go with them so I can have something to eat that covers up the texture of the eggs. I'm just not a huge fan! Of course, not liking eggs pretty severely limits my options for breakfast in the morning, so I've been trying to come up with protein heavy options that are still healthy, easy to make, and delicious! That's how I came up with this delicious Paleo approved sausage zucchini breakfast scramble! It only takes 5 ingredients and it makes enough for two days so I can skip cooking the next day!

You can of course use different sausage types for this sausage zucchini breakfast scramble if you're not too worried about closely following Paleo, but I like to use this kind just because of the flavor, anyway! I've started paying closer attention to my macros (macronutrients - protein, fats, carbs) and I'm finding it a lot easier to work those "treats" into my diet without overindulging on them. I've also been focusing quite a bit on strength training (though I DID do a 5 miler on Thanksgiving) and finding that it really satisfies me to see my fat dropping and muscle building at the same time! Sausage Zucchini Breakfast Scramble

This healthy and delicious sausage zucchini breakfast scramble is easy to make and guilt free!
Prep Time 5 minutes
Cook Time 10 minutes
Total Time 15 minutes
Servings 2 people


  • 1-2 Aidell's sausages (flavor of your choice)
  • 1 whole zucchini chopped
  • 1 tbsp bacon fat (can sub olive oil)
  • 1/2 onion chopped


  1. Chop your zucchini and onions to be small enough for bite size.
  2. Cut sausage into small rounds for bite size also.
  3. Put tablespoon of bacon fat in the pan and start to melt, throwing all the other ingredients in together.
  4. Cook for ~10 minutes or until the zucchini and onions are softer and sausage is browned on both sides.
