Y'all, I'm loving the east coast (and this Slow Cooker Cheesy Potato Soup recipe)! As I write this, we're currently being bombarded with snow and I couldn't be happier! I know most of you will think I'm out of my mind, but as someone who has lived in Arizona her whole life, snow around Christmas time fills me with nothing but absolute joy. Right now, I'm filling my apartment with the smell of Christmas, the spirit of Christmas, and plenty of Christmas decor!
Something about the cold weather just forces me to bust out my favorite soup recipes. This week, I'm sharing my Slow Cooker Cheesy Potato Soup recipe with you! It's a little more indulgent than the Buffalo Chicken Soup recipe I shared recently, but just as yummy and easy to make!
This is a Crock Pot recipe and I just wanted to say, if you're on the hunt for a new one, this one is totally the bee's knees! My mother in law received one for her birthday and it's now on my must-have list! I love that you can program it to have a delayed start. That's always something I've struggled with! If I was going to be out of the house for 12 hours but it only needed to cook for 6-8 hours, it always put me in a predicament! I could either have overcooked food, or have to settle for something else!
With that being said, you likely won't see much from me on the blog here through the end of the year, but 2017 is going to kick ass! I'll be setting some new bloggers resolutions for the blog, and you'll see those in the first week of January to find out what I'm working on this year!

Slow Cooker Cheesy Potato Soup Recipe
Slow Cooker Cheesy Potato Soup
This Slow Cooker Cheesy Potato Soup recipe is perfect for fall and winter and a perfect weeknight dinner recipe!
- 5 lbs Yukon potatoes chopped
- 1 large sweet onion chopped
- 3 oz chives chopped
- 1 can evaporated milk
- 1 lb velveeta cheese
- 1/2 cup butter
- salt and pepper to taste
Slice your cheese, onion, and potatoes into small chunks.
Place your potatoes and both types of onions in your crock pot and sprinkle with salt and pepper.
Fill pot with water until almost covering contents.
Cook on high for about 5 hours or until potatoes are mostly soft. Add in your cheese, milk, and butter at this point.
Allow to stay on high for about 20 more minutes and then reduce to the lowest setting for about 30 minutes to an hour.
Enjoy! Feel free to served with a sliced loaf of warm bread.
